Flavors of the Land of a Thousand Hills
Rwandan cuisine is simple, nutritious and deeply rooted in its fertile volcanic soil. Based on fresh ingredients harvested on mountain agricultural terraces, it combines plantains, legumes, sweet potatoes, cassava and lake fish, seasoned with the mythical spicy touch of Akabanga oil and accompanied by one of the best Arabica coffees in the world.
Must-Try Dishes
Matoke (Ibitoke)
The fundamental pillar of Rwandan cuisine. Green plantains steamed or slowly boiled in an aromatic sauce of tomato, onion, garlic, ginger and often beef or red beans, until reaching a smooth puree texture.
Skewers with Frites
The social and nocturnal meal par excellence in any restaurant or tavern. Skewers of marinated meat (usually goat, tender beef or lake fish) grilled over charcoal, served with crispy French fries or fried banana ('Mizuzu').
Isambaza
Small silvery fish endemic to Lake Kivu similar to sardines. They are served very crispy fried with tomato and onion sauce to be eaten whole as an appetizer, or cooked in a tasty stew with local vegetables.
Ubugali (Rwanda Ugali)
Dense and elastic dough made with cassava or corn flour cooked in boiling water. It is taken with the hands, forming a small hollow portion with the fingers to collect vegetable, meat or fish sauces.
Ibihaza
Traditional comforting stew made with sweet pumpkin cooked in a casserole with red beans, crushed peanuts and green leaves, striking a perfect balance between sweet and savory.
Akabanga
The legendary national hot seasoning. It is a concentrated extract of yellow 'Scotch Bonnet' chili pepper oil presented in small dropper bottles. A few drops add fiery spiciness and fruity aroma to any dish.
Typical Drinks

Bourbon Specialty Coffee
Washed high altitude coffee grown at more than 1,800 meters of altitude. It stands out for its bright acidity, fruity notes of black currant and chocolate, tasted in the signature cafes of Kigali and Gisenyi.
High Mountain Black Tea
Rwanda produces some of the best teas in the world in plantations such as Gisovu or Pfunda. It is taken hot with fresh boiled milk and a touch of ginger ('African Tea').

Urwagwa (Banana Beer)
Traditional fermented drink of peasant origin made from the pressed juice of ripe bananas mixed with toasted sorghum flour. It has a sour taste and is traditionally shared at celebrations.

Local Beers (Primus, Mutzig and Skol)
Refreshing lager beers very popular throughout the country, made with pure mountain water and served in large bottles to share at the end of the day.
Traditional Sweets
High Tropical Fruits
The usual dessert in Rwanda is freshly harvested fruit: sweet passion fruits, juicy mangoes, volcanic pineapples of exceptional sweetness, papayas and small sweet bananas ('Kamaramasenge').
Mandazi
Triangular yeast dough fritters fried until golden and fluffy, lightly scented with cardamom and coconut milk, perfect to accompany your morning tea or coffee.
Ikivuguto
Traditional fresh fermented milk with a creamy consistency and slightly acidic taste, consumed as a dessert or nutritious snack, often sweetened with wild forest honey.
Mizuzu with Honey
Slices of ripe plantain caramelized in a pan until golden, drizzled with pure eucalyptus honey or mountain flowers and sprinkled with cinnamon.
