Plats Iconiques
Tacos
The most emblematic and versatile dish of Mexico. It consists of a folded or rolled tortilla (usually corn) that can contain an infinite variety of fillings: from the famous 'pastor' to roast beef, carnitas, fish and stews.
Mole Poblano
A rich and complex sauce, originally from Puebla, that combines chilies, spices, nuts and chocolate. Traditionally it is served over pieces of turkey or chicken. It is a celebratory dish, laborious and full of history.
Chiles in Nogada
A seasonal dish (August-September) that represents the colors of the Mexican flag. They are poblano chiles stuffed with a minced meat and fruit, covered with a creamy walnut sauce (nogada), and decorated with red pomegranate and parsley.
Pozole
A traditional soup or stew made from cacahuazintle corn kernels, to which meat (usually pork or chicken) is added. It is served with a variety of garnishes such as lettuce, radish, onion, oregano and chili powder.
Tamales
A corn dough filled with meats, cheeses, chilies or fruits, wrapped in corn or banana leaves and steamed. There are countless varieties throughout the country, being a fundamental food at parties and daily life.
Cochinita Pibil
An emblematic dish of the Yucatan Peninsula. It is pork marinated in annatto and sour orange juice, wrapped in a banana leaf and slowly cooked underground. The result is incredibly tender and flavorful meat.

Tequila
The agave distillate par excellence, with designation of origin in the state of Jalisco and some other regions. It is enjoyed alone, accompanied by salt and lemon, or in cocktails such as the Margarita.
Mezcal
Another agave distillate, with a characteristic smoky flavor. It is produced in several regions, mainly in Oaxaca. It is traditionally drunk alone, with kisses, to appreciate its complexity.
Fresh Waters
Refreshing non-alcoholic drinks made from water, fruits, flowers or seeds and a little sugar. The most popular are horchata (rice), hibiscus (hibiscus flower) and tamarind.
Beer
Mexico is one of the largest producers and exporters of beer in the world. Brands such as Corona, Modelo and Pacífico are internationally recognized. There is also a growing craft beer scene.
Desserts traditionnels
Neapolitan Flan
A Mexican version of flan, creamier and denser than the traditional one, since it often includes cream cheese or condensed milk in its preparation. It is bathed in a generous caramel.
Three Milks
A spongy cake bathed in a mixture of three types of milk (evaporated milk, condensed milk and heavy cream), which gives it an incredibly moist texture and sweet flavor.
Churros
Although of Spanish origin, churros are immensely popular in Mexico. It is a fried dough, sprinkled with sugar and cinnamon, ideal for dipping in thick hot chocolate.
Cajeta
A goat's milk candy, typical of the city of Celaya. It is a thick and delicious candy that can be eaten by the spoonful, as a filling for crepes and other desserts, or in the form of traditional sweets such as glorias.

The official currency is the Mexican Peso (MXN). Although US dollars are accepted in important tourist areas, it is always advisable to pay in pesos to obtain a better exchange rate. Credit cards are accepted in most hotels, restaurants and large stores.
Tips (Tip)
Tipping is an important part of service culture. In restaurants, it is customary to leave between 10% and 15% of the total bill, depending on the quality of the service. It is not usually included in the account.
Transport
For long distances, local airlines and an extensive network of luxury buses (ADO, ETN) are excellent and comfortable options. To get around cities, VTCs (such as Uber or Didi) are generally safe and economical. Car rental is a good option to explore regions at your own pace.
Security
As in any large country, it is important to take precautions. Stay informed about the areas to visit, avoid displaying valuable objects, do not walk alone through poorly lit places at night and use reliable transportation. Taking out travel insurance is always recommended.
