Almost all the emblematic dishes of Macedonian cuisine are based on the combination of these three ingredients. Red pepper, in particular, is king, and the base of the beloved 'ajvar'.
The 'Kafana' and social life
The 'kafana' (traditional tavern) is the center of social life. It is where you have long, generous meals, listen to traditional music and drink 'rakija' until the wee hours, discussing life, politics and football.

Tavče Gravče
Considered the national dish. It is a stew of white beans cooked slowly and then baked in a traditional clay pot. Dried red pepper and sometimes sausage are often added.
Ajvar
A paste or condiment made primarily of roasted red peppers, eggplant, and garlic. It is spread on bread, served as a side dish or simply eaten by the spoonful. It is the pride of every home.
Shopska Salata
The salad par excellence of the Balkans. A simple but delicious mix of tomato, cucumber, pepper and onion, generously topped with grated white cheese ('sirenje'), similar to feta.
Kebapi (or Ćevapi)
Small grilled minced meat rolls, served on flatbread with raw onion. A classic of street food and 'kafanas'.
Pastrmajlija
A kind of oval pizza or coca, topped with small pieces of pork or chicken and sometimes egg. It is a specialty of the Shtip region.
Polneti Piperki
Stuffed peppers, usually with a mixture of rice and minced meat, cooked in a tasty tomato sauce. A much loved homemade dish.

Rakija
The powerful Balkan fruit brandy. The grape variety ('lozova') is the most common, but there are also plum and other fruits. It is served as an aperitif and is a symbol of hospitality.
Macedonian Wine (Vranec and Smederevka)
The country has a long winemaking tradition. Vranec is the flagship red variety, powerful and dark in color. Smederevka is the most common white grape, light and fresh.
Mastika
A liqueur with a strong anise flavor, similar to Greek ouzo. It is especially popular in the Strumica region and is served cold as an aperitif.
Tursko Kafe (Turkish Coffee)
Traditional coffee, prepared in a 'gjezve' and served strong and thick. It is the center of daily social life.

The bus network is the cheapest and most efficient way to travel around the country, connecting all cities. Taxis are also affordable, especially in cities, but it is advisable to agree on the price beforehand or make sure they use the meter.
Language
The official language is Macedonian, a Slavic language. The Albanian is also co-official. English is quite common among young people and in the tourism sector. Many also understand Serbian/Croatian.
Tips
Tips are not required, but are always appreciated. In restaurants and cafes, it is customary to round up the bill or leave around 10% if the service has been good.
