The Taste of the Ukrainian Soul

Ukrainian cuisine is a reflection of its fertile land: it is hearty, tasty and focused on fresh ingredients from the countryside. Considered the 'breadbasket of Europe', its cuisine is based on cereals, root vegetables such as beets and potatoes, and meats. Each dish tells a story and is an essential part of the country's legendary hospitality.

Must-Try Dishes

Borscht

The national soup par excellence and Intangible Cultural Heritage of Humanity. It's a vibrant, sweet and sour beet soup, which each family makes with their own secret recipe. It is served hot with a dollop of 'smetana' (sour cream) and 'pampushky' (garlic buns).

Varenyky

Dumplings made of cooked dough that can have savory fillings (potato, fresh cheese, cabbage) or sweet fillings (cherries, strawberries). They are an incredibly popular and versatile dish, often served with 'smetana' and fried onion.

Holubtsi

Cabbage leaf rolls filled with a mixture of rice, minced meat and vegetables, slowly cooked in a tasty tomato sauce. It is a comforting and much appreciated homemade dish.

kyiv chicken (Katleta po-kyivsky)

A chicken breast fillet rolled around a garlic and herb butter center, breaded and fried. When you cut it, the melted butter spills out, creating a delicious sauce.

Deruny

Grated potato pancakes fried until golden and crispy on the outside and tender on the inside. They are typically served with sour cream and are a simple but addictive dish.

salo

Salt-cured pork bacon, an iconic national tapa. It is cut into thin slices and served cold on rye bread, often with garlic or mustard. It is a product deeply rooted in Ukrainian culinary culture.

Typical Drinks

Horilka

The Ukrainian version of vodka, a strong brandy. It is common to find homemade or commercial infused versions, with 'pertsivka' (with chili) and 'medovukha' (with honey) being very popular.

Kvass

A traditional fermented drink very popular in summer. It is made from rye bread, has a sweet and sour taste, is slightly effervescent and has a very low alcohol content.

Uzvar

A sweet and aromatic drink made from cooking dried fruits, mainly apples, pears and prunes. It is the traditional drink for Christmas Eve dinner.

Ryazhenka

A fermented dairy product, similar to drinkable yogurt, but made with baked milk, which gives it a characteristic caramel color and a smooth, creamy flavor.

Traditional Sweets

Paska

A sweet, rich bread, often decorated with elaborate symbols made from the same dough. It is the central dessert of the Easter celebration and is taken to church to be blessed.

Syrniki

Small fried pancakes made of fresh cheese ('tvorog'), flour and egg. They are soft on the inside and golden on the outside. They are served for breakfast or as dessert, with sour cream, honey or jam.

Kutia

A ritual dessert that is the first course of Christmas Eve dinner. It is a pudding of cooked wheat grains, mixed with poppy seeds, nuts, honey and sometimes dried fruits.

Nalysnyky

Very thin crepes that are filled, typically with sweet fresh cheese, and then rolled and baked in a creamy sauce. They are a delicate and delicious dessert.
