Ugandan cuisine is abundant, natural and comforting, the result of an exceptionally fertile volcanic land that produces crops all year round. It is characterized by the essential use of cooked green banana (Matooke), dense ground peanut sauces, fresh freshwater fish and one of the most famous and beloved street foods in all of Africa.
The quintessential traditional banquet, historically reserved for Buganda royalty and weddings. It consists of pieces of meat (beef, chicken or goat) or smoked fish slowly steamed in a sealed package with banana leaves along with peanut sauce and vegetables, accompanied by Matooke puree.
The undisputed queen of Ugandan street food (whose name derives from 'rolled eggs'). A freshly made omelet with eggs, chopped tomato, onion, cabbage and a pinch of salt, hot rolled inside a crispy and tender chapati flatbread.
Consistent and elastic dough prepared by mixing pearl millet flour with cassava flour in boiling water. It is consumed hot with your hands, molding small bites to dip them in substantial meat or vegetable sauces.
Skewers and pieces of marinated meat (usually goat, beef or chicken) grilled over open heat on charcoal grills in street stalls and taverns at dusk, served with roasted plantain ('gonja') or French fries.
Whole freshwater fish marinated with lemon, garlic and ginger, fried very crispy on the outside and juicy on the inside, served with spiced rice, potatoes and spicy tomato sauce ('kachumbari').
Traditional and unique dish of the Bagisu ethnic group in Mount Elgon, made with tender bamboo shoots dried and smoked over a wood fire, simmered in a creamy peanut and rock salt sauce.
The national distillate par excellence. Originally a homemade banana or sugar cane brandy ('war gin'), today it is a smooth gin with a subtle botanical touch, very popular combined with tonic and lime.
Uganda's most emblematic and award-winning beer, made with water from the sources of the Nile River and local malt. It has a robust flavor, balanced body and a characteristic golden color.

Uganda is one of the world's largest producers of high mountain Robusta and Arabica coffee. Black tea is taken very hot, boiled with fresh milk, sugar and plenty of crushed ginger.
100% natural juice made fresh by blending the pulp of the local passion fruit (with intense acidity and sweetness), served very cold in any cafeteria or restaurant.
Small traditional sweet fritters made only with mashed very ripe bananas mixed with cassava flour and fried in oil until golden brown, crispy on the outside and chewy on the inside.
The daily dessert is freshly cut seasonal fruit: volcanic pineapples of exceptional sweetness, juicy mangoes, papayas and the gigantic and aromatic 'Jackfruit' (jackfruit).
Sweet yeast dough flavored with ground cardamom and coconut milk, cut into triangles and fried, ideal to accompany morning coffee or snack.
Ripe plantain slowly grilled over charcoal embers, bathed with pure forest honey and a light touch of cinnamon.
