Saborea Andalusia: Una aventura gastronómica única
Explora los sabores auténticos de Andalusia en una experiencia gastronómica inolvidable.
Andalusia is the embodiment of the soul of southern Spain, a land of dazzling sunshine, deep passions and a historical legacy that takes your breath away. Here, the spell of the Arab past is felt in the patios of the Mosque of Córdoba and in the gardens of the Alhambra in Granada. The festive spirit explodes at the April Fair in Seville and in the songs of the chirigotas of Cádiz. It is a region of dramatic contrasts: the snow-capped peaks of the Sierra Nevada, the endless beaches of the Costa de la Luz, the Tabernas desert and the Natural Parks of Doñana and Cazorla. Traveling through Andalusia is a feast for the senses, from the taste of an espeto on the beach to the sound of a flamenco guitar in a tablao in Sacromonte.

Flavors of Andalusia
Andalusian gastronomy is the cradle of tapas and the expression of local products. It is a fresh, varied cuisine deeply influenced by its Arab heritage and the richness of its coasts and fields.
Must-Try Dishes
Gazpacho and Salmorejo from Cordoba
Cold soups are kings of summer. Gazpacho is more liquid and is drunk as a refreshing drink, while Salmorejo is a thick cream of tomato and bread, served with hard-boiled egg and chopped ham.
Fried Fish
The emblem of the coast of Cádiz and Málaga. An assortment of small fish (anchovies, squid, pijotas...) floured and fried in extra virgin olive oil. Crispy and delicious.
Sardine Skewers
The image of the Malaga summer. Sardines skewered on a pole and grilled on the beach sand. A simple and sublime delicacy.

Acorn-fed Iberian Ham
Coming mainly from the Sierra de Huelva and the Valley of the Pedroches (Córdoba). Considered one of the best in the world, it is cut with a knife and melts in the mouth.
Bull's Tail
A hearty, honeyed stew of bull or cow tail, slowly braised for hours in red wine until the meat falls away from the bone. A fundamental dish of Cordoba cuisine.
Grenadine beans
A typical dish from the Granada plain. Tender broad beans stewed with serrano ham and often topped with a fried egg.
Spinach with Chickpeas
A stew of Sephardic origin that is very popular in Seville. A humble dish, spiced with cumin, often served as a tapa.
Fried Eggplants with Cane Honey
A delicious contrast of flavors. Eggplants cut thinly, fried until crispy and drizzled with a trickle of cane honey (molasses).
Typical Drinks

Sherry Wine
The most famous fortified wine in the world, originating from 'Marco de Jerez'. It includes an incredible variety of styles, from Fino and Manzanilla (dry and light) to Amontillado, Oloroso and the sweet Pedro Ximénez.
Rebujito
The official drink of the Andalusian fairs, especially that of Seville. It's an incredibly refreshing cocktail that mixes Manzanilla or Fino wine with a lemon-lime soda (like 7-Up or Sprite).
Summer Red
Although it is drunk throughout Spain, it has a special roots in the south due to the heat. It is a simple mixture of red wine with soda or lemon soda, lighter and more common in everyday life than sangria.
Anise
Andalusia has a great tradition in the production of anise liqueurs, with important centers such as Rute (Córdoba) or Cazalla de la Sierra (Seville). It is drunk alone, with water or in coffee.

Travel advisory
In summer, the heat in inland cities like Seville and Córdoba can be extreme; Hydrate constantly and avoid the middle of the day. Tickets for the Alhambra in Granada must be purchased **months in advance** online, as they sell out quickly. As in any big city, keep an eye on your belongings in the tourist areas of Seville, Granada and Malaga.
